Description
Darbar in Hindi refers to the king’s court and signifies the prime importance. The dishes served in ancient darbars were known to be rich and prime. This is definitely true with this Darbari Chicken Kebab. Made of minced chicken, with paste of lentils and chopped onion and coriander and green chillies usually added to the mixture, which is kneaded in a disc-like shape and fried. Best results are obtained when ckked in a brass utensil over a coal fire. A binding agent is used to keep the kebab together to project the Darbari look.
